This is a refreshing salad enhanced by the delicious flavors. A lovely smoked salmon salad which makes a cracking lunch starter – sweet, peppery, lovely.
Wild Rocket Salad with Smoked Salmon
2 Large avocados
2 Spring onions, finely diced
1 tablespoon Lemon juice
1 tablespoon Chopped fresh flat-leaf parsley
50 g/1 3/4 oz Wild rocket
250 g/9 oz Smoked salmon
2 tablespoon Lime juice
150 ml/5 fl oz Mayonnaise
Chopped fresh flat-leaf parsley
plus extra sprigs to garnish
1 Finely grated rind of lime
Shred the rocket and arrange in 4 individual glass bowls. Scatter over the chopped parsley and spring onions.
Halve, peel and stone the avocados and cut into thin slices or small chunks. Brush with the lemon juice to prevent discoloration, then divide between the salad bowls.
Mix together gently. Cut the smoked salmon into strips and scatter over the top.
Put the mayonnaise in a bowl, then add the lime juice, lime rind and chopped parsley. Mix together well. Spoon some of the mayonnaise dressing on top of each salad and garnish with parsley sprigs.
