Quick and Easy Seafood Stir-Fry

If you’re trying to get rid of meat on your diet, here’s a quick and easy seafood recipe – Seafood Stir-Fry, great for any seafood you fancy.

Quick and Easy Seafood Stir-Fry

Ingredients:

6 Spring onions, trimmed and chopped
1 Fresh jalapeno chili, deseeded and finely chopped
2 sprays Sunflower oil
1 tablespoon Soy sauce
4 oz Bean sprouts
4 oz Fresh spinach leaves
4 oz Mangetouts, trimmed
3 oz Raw prawns, peeled and deveined
4 oz Squid, cleaned and cut into thin slices
4 oz Baby sweet corn, sliced in half lengthways
4 oz White fish, such as boneless monkfish fillet
1-inch Fresh root ginger, peeled and grated

Preparation:

Discard any skin from the white fish, rinse lightly and pat dry on kitchen paper. Cut into small pieces.

Heat a wok and when hot, add the oil and heat for 10 sec0nds.Add the chili and ginger and stir-fry for 1 minute then add the white fish and prawns and stir-fry for 2 minutes.

Add the baby sweet corn, mangetouts, spring onions and soy sauce and continue to stir-fry for 2-3 minutes, or until the fish is just cooked and the prawns have almost turned completely pink.

Add the squid, spinach and bean sprouts and continue to stir-fry for a further 2 minutes, or until the fish, prawns and squid are cooked. Serve immediately, divided equally between 4 warmed bowls.

* Serves 4.

A good variation of this recipe is using scallops instead of prawns and squid. Just add your favorite vegetables like asparagus, young corn, etc.
