Sweet Blend Moroccan Style Turkey with Apricots

This Moroccan-inspired recipe is usually cooked slowly to better blend the spices into the meat and vegetables. You would be surprised at how great-tasting this recipe is.

Moroccan Style Turkey with Apricots

Ingredients:

1 Onion, sliced
12 Dried apricots
1 teaspoon Ground cumin
1/2 teaspoon Ground cinnamon
1 teaspoon Hot chili pepper sauce
2 tablespoon Chopped fresh coriander
1 1/2 oz Corn flour
8 1/2 oz Canned chickpeas, drained
14 oz Skinless, boneless turkey breast, diced
2 1/2 fl oz Cold water
1 pint Chicken stock
Cooked couscous, rice or jacket sweet potatoes, to serve

Preparation:

Put the turkey, onion, cumin, cinnamon, chili pepper sauce, chickpeas and stock into a large saucepan and bring to the boil, then reduce the heat, cover and simmer for 15 minutes.

Stir in the apricots and return to the boil. Reduce the heat, cover and simmer for a further 15 minutes, or until the turkey is thoroughly cooked and tender.

Blend the corn flour with the water in a small bowl and stir into the casserole. Return to the boil, stirring constantly, and cook until the casserole thickens. Reduce the heat, cover and simmer for a further 5 minutes.

Stir half the coriander into the casserole. Transfer to a warmed serving dish and sprinkle over the remaining coriander. Serve immediately with cooked couscous, rice or jacket sweet potatoes.
