Simple Grilled Tuna and Vegetable Kebabs

Simple Grilled Tuna and Vegetable Kebabs

Ingredients:

2 Red onions
1 Courgette, sliced
12 Cherry tomatoes
4 Tuna steaks 5 oz each
1 Red pepper, deseeded diced into 1-inch pieces
1 Yellow pepper, deseeded diced into 1-inch pieces
4 tablespoon Olive oil
1 tablespoon Chopped fresh oregano
Lime wedges to garnish
Freshly ground black pepper

To serve:

Selection of salads
Cooked couscous, new potatoes or bread

Preparation:

Preheat the grill to high. Cut the tuna into 1-inch dice. Peel the onions and cut each onion lengthwise into 6 wedges.

Divide the fish and vegetables evenly between 8 presoaked wooden skewers and arrange on the grill pan.

Mix the oregano and oil together in a small bowl. Season to taste with pepper. Lightly brush the kebabs with the oil and cook under the preheated grill for 10-15 minutes or until evenly cooked, turning occasionally. If you cannot fit all the kebabs on the grill pan at once, cook them in batches, keeping the cooked kebabs warm while cooking the remainder. Alternatively, these kebabs can be cooked on a barbecue.

Garnish with lime wedges and serve with a selection of salads, cooked couscous, new potatoes or bread.

* Serves 4.

Marinating the tuna before grilling would make it flavorful. You may use soy sauce, lemon juice, vegetable oil, a bit of sugar, garlic, and pepper for the marinade.
