Spicy Chili Beef with Black-Eyed Beans

Ingredients:

1 Small onion, peeled and finely chopped
1 Clove garlic, peeled and crushed or finely chopped
1/7 Green chili, to taste, deseeded and finely chopped
1 Small green pepper, chopped into 1/2-inch squares
1/7 teaspoon Chili sauce
2 teaspoon Tomato puree
1 teaspoon Concentrated vegetable stock
1 teaspoon Olive oil
1 3/4 oz White rice
3 1/2 oz Canned tomatoes, chopped
2 3/4 oz Extra-lean braising steak, cut into very small pieces
1 3/4 oz Canned black-eyed beans or kidney beans, drained and rinsed
Freshly ground black pepper, to taste

Preparation:

Heat the oil in a non-stick frying pan and saute the onion, garlic and pepper over a medium heat for 2-3 minutes until the onion is soft and just turning golden.

Add the beef and cook, stirring, until brown on all sides. Add the remaining ingredients except the rice, and season to taste. Stir well, bring to a simmer, cover and reduce the heat.

Cook for 30 minutes, then check the dish for heat, seasoning and dryness. Add extra chili sauce, very finely chopped fresh chili or ready-chopped chilies from a jar if it is not hot enough for you, and add water if the sauce looks too dry.

Cook for a further 25-30 minutes until the meat is completely tender. Meanwhile, cook the rice according to the instructions on the packet. Drain and transfer the cooked rice to a warm plate, spoon over the sauce and serve.
