Very Filling Ratatouille Mackerel

Ingredients:

1 Red pepper
1 Red onion, peeled
12 Fresh basil leaves
1 Garlic clove, peeled and sliced thinly
2 Courgettes, trimmed and thickly sliced
1 tablespoon Olive oil
14 oz Can chopped tomatoes
4 x 10 oz Small mackerel, cleaned and removed heads
Olive oil spray
Drizzling of lemon juice
Sea salt and freshly ground black pepper

To Serve:

Couscous or rice mixed with chopped parsley

Chef’s Tip:

For an extra kick, add a little chopped, fresh chili to the ratatouille.

Preparation:

Preheat the oven to 375°F/Gas Mark 5. Cut the top off the red pepper, remove the seeds and membrane, then cut into chunks. Cut the red onion into thick wedges.

Heat the oil in a large pan and cook the onion and garlic for 5 minutes or until beginning to soften.

Add the pepper chunks and courgette slices and cook for a further 5 minutes.

Pour in the chopped tomatoes with their juice and cook for a further 5 minutes. Season to taste with salt and pepper and pour into an ovenproof dish.

Season the fish with salt and pepper and arrange on top of the vegetables. Spray with a little olive oil and lemon juice. Cover and cook in the preheated oven for 20 minutes.

Remove the cover, add the basil leaves and return to the oven for a further 5 minutes. Serve immediately with couscous or rice mixed with parsley.
