Really Healthy Fruity Yogurt Cups

Ingredients:

1 1/2 tablespoon Finely grated orange rind
16 fl oz Low fat natural yogurt
8 oz Mixed berries, like blueberries, raspberries and strawberries, plus extra to decorate
Fresh mint sprigs, to decorate (optional)

Fruity yogurt

Preparation:

Set the freezer to quick freeze for a minimum of two hours just before freezing this dish. Line a 12-hole bun tin with 12 paper cake cases.

Mix orange rind and yogurt together in a large bowl. Cut any large strawberries into pieces, same size as the blueberries and raspberries.

Add the fruit to your yogurt then spoon into the paper cases. Freeze for two hours, or till just frozen.

Decorate with additional mint sprigs and fruit before serving. Remember to return the freezer to its original setting afterwards.
