Greek Feta Salad
8 Black olives
4 Tomatoes, sliced
1 Small red onion, sliced thinly
1/2 Cucumber, peeled and sliced
115 g/4 oz Feta cheese, cubed
Few vine leaves
For the dressing:
1 tablespoon Lemon juice
1/2 teaspoon Dried oregano
3 tablespoon Extra-virgin olive oil
Salt and pepper
To make the dressing, put the oil, lemon juice, oregano, salt and pepper in a screw-topped jar and shake together until blended.
Arrange the vine leaves on a serving dish and then the tomatoes, cucumber and onion. Scatter the cheese and olives on top. Pour the dressing over the salad and serve.
