Crispy Curry Topped Salmon

Salmon is known as a good source of Omega 3 fatty acids. This low calorie food is often referred to as ‘brain food’. It is also a good source of protein.

Crispy Curry Topped Salmon

Ingredients:

4 Salmon fillets about 6 oz each
1 tablespoon Chopped fresh coriander
1 1/2 tablespoon Curry paste
1 1/2 oz Fresh wholemeal breadcrumbs
Lemon wedges and salad leaves (optional), to garnish

Preparation:

Preheat the oven to 350°F/Gas Mark 4. Discard any fine bones from the salmon fillets and rinse lightly. Pat dry with kitchen paper.

Mix the breadcrumbs, curry paste and chopped coriander together in a bowl until well blended.

Place each salmon fillet on a sheet of foil and pat the curry-flavored breadcrumbs on top of each. Cover with another sheet of foil and place on a large baking tray.

Bake for 10 minutes then remove the top sheet of foil and cook for a further 10 minutes, or until the salmon is tender. Serve garnished with lemon wedges and salad leaves if preferred.
